What is the effect of different kind of grill cloth to the frequency response and directivity response?
Is it that the finer the grill cloth, the more high frequency it absorbs, but also disperses the high frequency more ... and vice versa?
Why can't I just put a regular piece of cloth or mesh?

In general, thinner gill cloths are more acoustically transparent.
The speaker design also has to be taken into account. My speakers are designed to be with the grills on. Some however prefer to take the grills off. This is something that would depend on the individual's gear and listening preferences. Thicker grill cloths are used in some of the older speakers like the Klipsch Heresy etc and tend to take off some of the glare caused by higher frequencies.

Thanks for suggestion, but iam looking for Mesh type cloth which is used in Apple homepods -
