Is the negative difference you mentioned because of the drop in voltage due to the additional diodes?

The only benefit I can think of is that the currents on the positive and negative side would have different return paths to the transformer...
How does that turn out by the addition of those diodes? Am genuinely confused.
 
The reason for two bridges is simply that we often do not want to take the risk of joining the two wires of two separate AC secondaries and make one center tapped secondary prior to rectification (a safe practice however).

Either it should be done right at the transformer or not be done at all. Some say that making the center tap joint far from transformer makes the ground dirty. There could also be phase mismatch from an oversight or poor indication of polarities on the trafo. Of course we lose a couple more volts but with two bridges rectifying two secondaries there is absolutely no chance of phase mismatch. One can connect the AC secondaries in whatever orientation of polarity (while taking care not to mix up the two secondaries :) ) and it will still work fine.

Oh, ok. This explanation makes perfect sense. It has no impact on audio performance, but makes construction and testing safer. I'd never encountered this explanation before.
