Also, check out the Traveling Wilburys, a super group consisting of Bob Dylan, George Harrison, Jeff Lynne, Roy Orbison, Tom Petty, and Jim Keltner. I have both their albums.

+1 to that - You said it musicbee - I have heard them and they are super cool unfortunately I dont have a very good recording
 
Some numbers I have been enjoying recently:

Ronan Keating - Something Big, from Ronan Meets Burt album. Ronan Keating sings standards by Burt Bacharach. I love the lively acoustic guitar work on this song and the two ladies doing backing vocal duties.

Another number I was listening to: Kenny "Babyface" Edmonds Time in a Bottle, an excellent acoustic cover of Jim Croce's hit. Babyface is one hell of a guitar player, btw.

Munchener Freiheit - Keeping The Dream. Excellent vocal harmony by this Gernan band. Avoid the cheesy music video, though.

Sarah McLachlan - Illusion of Bliss, very nice despite the sibilance.

Spyrogyra - You Can Count on Me

Rokia Traore - The Man I Love, by the songstress from Mali. Features exotic stringed instruments, and her exotic voice. Excellent recording too.

Jennifer Warnes - Famous Blue Raincoat. The plaintive cry of the sax intro can send shivers down your spine. And what voice. IIRC, this song is composed by Leonard Cohen.

Jean Luc Ponty - I bought some LPs in very fine condition. Somehow I couldn't really warm up to his amplified violin music.
 
Tina Arena - Only Lonely
Genre: Adult Contemporary Pop.
One heck of a stunning ballad!
Minimalist, moody, atmospheric, sad, warm, slow, almost dreamy and deeply emotional. The lyric is simple - haiku-like, really. The music, simply strings. Tina's sultry, bordering on the ethereal, delivery is spot on. This is simply a pleasure to listen to. Recommended, especially if you like ballads.

Couldn't help grinning at the obviously fake "recording session" though. Notice the look-no-hands piano at the end!
